PB&J Smoothies

One of my favorite ways to get in some easy servings of fruits and vegetables is by blending up a quick smoothie!  Not only are they great on the go, but they can be as simple or as complicated as you want and there are endless ways to mix up different foods, nutrient profiles, and flavors.

This Peanut Butter Sandwich Smoothie is a personal favorite of mine when I don't want to fuss with too many things in the kitchen - it comes together with just five ingredients, no prep work, and is an instant hit.  The strong flavor of the peanut butter masks a lot of the other fruit and veggie notes, making this a great introduction for even the biggest healthy smoothie skeptic. Protein-packed peanut butter keeps you full, the banana adds potassium, and arugula is rich in Vitamin K.

Blend:

  • A handful of berries of your choice

  • 1 banana

  • 1/4 to 1/2 cup of peanut butter

  • 1 cup of arugula

  • 1 cup of blueberry juice [increase based on your preferred consistency]
